About your host, Rafa: “I have a diploma in cuisine from the Le Cordon Bleu haute cuisine school in Madrid and the title of Expert in Culinary Technology from ESAH (Open Superior Studies in Hospitality) in collaboration with the School of Hospitality of Seville.”

Sample Menu

• Amuse bouche and welcome drink
• Appetizer – Served at the terrace table. It may be olives seasoned in the style of my father or a sausage of the “Sierra de Huelva”, etc
• Vegetables and egg – Onion, green pepper, zucchini, eggplant and tomato stewed in the style of the traditional “Pisto Manchego” seasoned with soy sauce
• “Choco” meatballs (cuttlefish) with pasta – “Choco” meatballs (cuttlefish) stewed in a sauce of cherry tomatoes and Manzanilla-Sanlúcar de Barrameda wine accompanied by tagliatelle

• “Carrilleras” of Iberian pork with orange and chocolate sauce – A tasty Iberian pork stew where orange and chocolate are in harmony with spices such as juniper or allspice.
• Tocino de cielo – A typical Andalusian sweet. The tradition places its origin in Jerez de la Frontera (Cádiz-Spain) more than 500 years ago.
• Petits Fours – Small sweet snacks to accompany coffee or tea.
